RED WHITE AND BLUE MINI CHEESECAKES



This Is A Brookshire's Best Recipe
Makes: 12 servings

Ingredients:
2 (8 ounce)packages reduced fat cream cheese, softened
1/3 cup Burleson ’s pure honey
2 eggs
1 teaspoon McCormick French Vanilla flavoring
12 vanilla wafers cookies
21 ounce can cherry pie filling
7 ounce can Reddi Wip whipped cream
1 pint fresh blueberries

Directions:

Preheat oven to 325 degrees.Place paper liners in 12 muffin cups and put one wafer cookie in each.

Mix cream cheese, Burleson's pure honey and McCormick French Vanilla with an electric mixer until smooth. Mix in eggs until creamy. Fill each muffin cup 3/4 full and bake 12 to 15 minutes, until cheesecakes bounce back when lightly touched. Let cool completely.Top with cherry pie filling,a swirl of Reddi Wip whipped cream and several blueberries for a red,white and blue garnish.
